A classic lighter style Pinot Noir with marinated cherries, earth, mushroom and toasted wood notes,
finished with herbs in a dry savoury style.

The 2021 Pinot Noir was handpicked from blocks 1 & 10 in the Estate vineyard, at 12.5 Beaume, and then fermented in open fermenters with 25% whole bunches (75% Destemmed), for 8 days before pressing and undergoing secondary fermentation in old French oak barriques for 3 months.
