Generous flavour with fresh lemon and lime, as well as lemon pith phenolics. A refreshing acid backbone and talcy mouthfeel drive the finish

Winemaker's Notes
Sourced from 37 year-old Semillon vines rooted in shallow sandy-loam soils on the gravel flats of Blue Pyrenees Estate. These weathered, low-fertility soils are ideal for producing white wines with finesse and crystalline purity. The fruit was machine harvested on the 7th of March 2024, then gently pressed and cold settled before undergoing a two-week fermentation in tank with a neutral yeast strain. The wine spent six weeks on lees before a light fining and filtration. Bottles on the 19th of September 2024, 200 cases produced.
