Tawny is the classic fortified wine of the Douro Valley Portugal. This wine style is made in warm climates where the grapes can ripen to extreme sugar levels and grape spirit is added to stop the ferment, retaining some sweetness.
The Pyrenees would typically be too cold for making Tawny but a late heatwave in March of 2008 allowed some of the Shiraz grapes on the Blue Pyrenees Estate vineyard to ripen to such extreme levels, that the winemakers decided it was possible to make Tawny.
20 degrees Beaume Shiraz was fermented to app. 14% alcohol and then pressed, fortified, racked and aged in old French barriques for 54 months before bottling in October 2012.
